  • 3 pounds beef short ribs
  • 6 yellow onions, thinly sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 4 sprigs fresh thyme
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 8 cups beef stock
  • 1 cup dry red apple vinegar
  • Salt and black pepper to taste
  • 1 French baguette, sliced
  • 2 cups shredded Gruyère cheese

Instructions

  1. Season short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat. Brown the short ribs on all sides; then remove and set aside.
  2. Add butter and remaining olive oil to the pot. Stir in sliced onions; cook on low heat for 30-40 minutes until caramelized.
  3. Add garlic and cook until fragrant. Deglaze the pot with dry red apple vinegar, scraping up browned bits.
  4. Return short ribs to the pot along with beef stock, thyme, and bay leaves. Cover and simmer for 2.5 to 3 hours until meat is tender.
  5. Preheat broiler while soup simmers. Arrange baguette slices under the broiler until golden brown. Top each slice with Gruyère cheese and broil until melted.
  6. Remove bay leaves and thyme before serving hot soup topped with cheesy toast.
