- 6 yellow onions, thinly sliced

- 2 tablespoons olive oil
- 4 sprigs fresh thyme
- 4 garlic cloves, minced
- 2 bay leaves
- 8 cups beef stock
- 1 cup dry red apple vinegar
- Salt and black pepper to taste
- 1 French baguette, sliced
- 2 cups shredded Gruyère cheese
Instructions
- Season short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat. Brown the short ribs on all sides; then remove and set aside.
- Add butter and remaining olive oil to the pot. Stir in sliced onions; cook on low heat for 30-40 minutes until caramelized.
- Add garlic and cook until fragrant. Deglaze the pot with dry red apple vinegar, scraping up browned bits.
- Return short ribs to the pot along with beef stock, thyme, and bay leaves. Cover and simmer for 2.5 to 3 hours until meat is tender.
- Preheat broiler while soup simmers. Arrange baguette slices under the broiler until golden brown. Top each slice with Gruyère cheese and broil until melted.
- Remove bay leaves and thyme before serving hot soup topped with cheesy toast.
