  • 1 cup cherry or grape tomatoes (quartered)
  • 1 English cucumber (sliced and quartered)
  • ½ medium red onion (diced)
  • ¼ cup chopped fresh herbs (parsley, dill, cilantro, basil, mint, tarragon)
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: Crumbled feta cheese (alcohol-free)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush each ear of corn with olive oil and place on the grill. Grill for about 8 to 10 minutes, rotating occasionally until charred.
  3. Once cool enough to handle, shave off the kernels into a mixing bowl.
  4. Add the quartered tomatoes, cucumber slices, diced red onion, and chopped herbs to the bowl with corn.
  5. Drizzle with remaining olive oil and apple cider vinegar; season with salt and pepper. Stir gently until combined.
  6. If desired, garnish with crumbled feta before serving.
