- 3 tablespoons powdered sugar
- 2 large eggs

- 2 cups + 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter (2 sticks, softened)
- 3 – 4 cups confectioner’s sugar (sifted)
- Pinch of salt
- 2 teaspoons cherry extract or maraschino cherry juice (2–3 tablespoons)
- 2–3 tablespoons almond milk or cream
- 1–2 drops pink food gel
- Sprinkles
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it or lining with parchment paper.
- In a mixing bowl, cream together softened unsalted butter, granulated sugar, and powdered sugar until light and fluffy.
- Add eggs and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually combine with the wet ingredients until just mixed.
- Spread the dough evenly in the prepared pan and bake for about 12 minutes or until lightly golden on the edges. Cool completely on a rack before frosting.
- For the frosting, beat softened unsalted butter with sifted confectioner’s sugar. Mix in salt and cherry extract or maraschino cherry juice until smooth. Add almond milk to achieve desired consistency.
