  • 600 g baby potatoes
  • 450 g chicken breast
  • 200 g mushrooms
  • 1 red bell pepper
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried Italian herbs
  • 1 tsp paprika
  • 2 cloves garlic, minced
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 200C (400F).
  2. Toss halved baby potatoes in olive oil, garlic powder, oregano, salt, and pepper. Spread them on a baking sheet.
  3. Roast potatoes for 20-25 minutes until golden brown.
  4. In a skillet over medium-high heat, cook cubed chicken breast with salt, pepper, paprika, and Italian herbs until golden.
  5. Add minced garlic, sliced mushrooms, and diced red bell pepper; cook until vegetables are tender (about 5-6 minutes).
  6. Serve hot, garnished with fresh parsley alongside the roasted potatoes.
