Ingredients

  • 1 large chicken breast roast (about 800 g)
  • 3 tbsp olive oil
  • 3 minced garlic cloves
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 600 g baby potatoes (red & yellow mix)
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200C (390F).
  2. In a bowl, combine olive oil, garlic, parsley, thyme, rosemary, lemon juice, salt, and pepper. Rub this marinade over the chicken breast.
  3. Toss the baby potatoes with olive oil, salt, and pepper in another bowl.
  4. Arrange the chicken in a baking dish with potatoes around it.
  5. Roast for 40-45 minutes until the chicken reaches an internal temperature of 75C (165F).
  6. Create a pan sauce by deglazing the baking dish with chicken broth after removing the chicken and potatoes.
  7. Slice the chicken and serve it drizzled with sauce alongside roasted potatoes.
