Ingredients
- 1 large chicken breast roast (about 800 g)
- 3 tbsp olive oil
- 3 minced garlic cloves
- 2 tbsp fresh parsley, chopped
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 600 g baby potatoes (red & yellow mix)
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat your oven to 200C (390F).
- In a bowl, combine olive oil, garlic, parsley, thyme, rosemary, lemon juice, salt, and pepper. Rub this marinade over the chicken breast.
- Toss the baby potatoes with olive oil, salt, and pepper in another bowl.
- Arrange the chicken in a baking dish with potatoes around it.
- Roast for 40-45 minutes until the chicken reaches an internal temperature of 75C (165F).
- Create a pan sauce by deglazing the baking dish with chicken broth after removing the chicken and potatoes.
- Slice the chicken and serve it drizzled with sauce alongside roasted potatoes.
