  • 3.4 lb bone-in lamb shoulder, trimmed
  • Salt & freshly ground black pepper
  • 6 cloves garlic, smashed
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 cup lamb or chicken broth

Instructions

  1. Trim excess fat from the lamb shoulder and season with salt and pepper.
  2. Mix garlic, Dijon mustard, honey, and olive oil in a bowl to create the marinade.
  3. Rub the marinade all over the lamb and let it marinate in the fridge for at least 1 hour (or overnight).
  4. Preheat your oven to 300°F (150°C).
  5. Sear the marinated lamb in a cast iron skillet until browned on all sides.
  6. Transfer the lamb to an oven-safe roasting pan, adding fresh herbs and broth around it.
  7. Cover with foil and roast for about 4 hours or until tender.
  8. Allow resting for 15 minutes before carving and serving.
