- 10 oz crimini mushrooms (sliced)
- 6 oz rice noodles
- 1.5 heads bok choy (roughly chopped)

Instructions
- Heat 1-2 tablespoons of olive oil in a medium-sized stockpot over medium heat.
- Sauté diced shallots until translucent (4-5 minutes).
- Add chopped white parts of green onions, minced garlic, and ginger; cook until fragrant (1-2 minutes).
- Pour in chicken or vegetable broth, add star anise and soy sauce, then simmer covered for 10 minutes.
- Remove star anise; stir in sliced mushrooms, noodles, and bok choy. Simmer until tender (5-8 minutes).
