Ingredients
- 1 lb ground beef (or ground turkey)
- 1 onion (finely chopped)
- 2 cloves garlic (minced)
- 2–3 roasted green chiles (Hatch or poblano, peeled and chopped)
- 2 medium tomatoes (diced)
- 1 large potato (peeled and diced)
- ½ cup peas (optional)
- ½ tsp cumin
- ½ tsp coriander
- ½ tsp dried oregano
- Salt and pepper to taste
- ¼ cup beef broth or water
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another minute.
- Add ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, approximately 8-10 minutes. Season with salt and pepper.
- Mix in diced potato, tomatoes, roasted green chiles, peas (if using), along with cumin, coriander, oregano, and pour in beef broth or water to help cook the potatoes evenly.
- Lower the heat to low and cover the skillet. Let it simmer for about 20 minutes or until potatoes are tender.
