  • 4 chicken breasts
  • 4 slices mozzarella cheese
  • 4 slices ripe tomatoes
  • 2 tablespoons fresh basil (sliced)
  • ½ cup balsamic vinegar
  • 2 tablespoons light brown sugar
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper

Instructions

  1. Preheat the grill to medium-high heat and season the chicken breasts with Italian seasoning, garlic powder, onion powder, salt, and pepper on both sides.
  2. Spray the grill with non-stick cooking spray and grill the chicken for 6-7 minutes on each side until almost fully cooked.
  3. Top each grilled chicken breast with mozzarella cheese and close the lid to melt the cheese for an additional few minutes.
  4. Remove from the grill and layer with tomato slices and fresh basil. Drizzle generously with balsamic reduction before serving.
