  • 2 cups cherry tomatoes (halved)
  • 2½ cups corn kernels
  • 5 tablespoons olive oil (divided)

  • 2 tablespoons lemon juice
  • 1 clove garlic (minced)
  • 1 teaspoon dried oregano (or any other dried herbs)
  • 2 cups arugula
  • ½ cup crumbled feta cheese (or bleu cheese)

Instructions

  1. Preheat the grill to medium-high (425°F) and brush the grates with oil.
  2. Drizzle olive oil over zucchini slices; season with salt and pepper. Grill for 2-3 minutes per side until tender.
  3. In a grill pan, combine the corn and tomatoes with olive oil and seasoning. Grill for about 2-3 minutes until charred.
  4. In a salad bowl, whisk olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  5. Toss grilled veggies with arugula in the dressing and top with crumbled feta cheese before serving.
