  • 3 pounds boneless chuck roast (cut into 1-inch pieces)
  • 4 slices thick-cut turkey bacon (diced)
  • 1 teaspoon vegetable oil
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 ½ cups beef broth
  • 1 tablespoon brown sugar
  • 1 pound carrots (peeled and cut into chunks)
  • 1 ½ pounds Yukon Gold potatoes (peeled and cut into chunks)
  • 2 sprigs thyme
  • Salt and freshly ground pepper (to taste)
  • Chopped parsley for garnish

Instructions

  1. In a large Dutch oven over medium-high heat, warm vegetable oil. Cook diced turkey bacon until crispy; remove and set aside.
  2. Season beef with salt and pepper. Brown pieces in batches, then set aside.
  3. Sauté onions until browned; add garlic and cook until fragrant.
  4. Stir in tomato paste and flour; cook briefly before adding beef broth while scraping the pot's bottom.
  5. Mix in additional beef broth, brown sugar, and return beef and bacon to the pot along with thyme sprigs. Bring to a boil.
  6. Cover and simmer for one hour.
  7. Add carrots and potatoes; cover again and cook until tender—about one more hour.
  8. If needed, thicken by boiling uncovered or using a slurry.
  9. Discard thyme sprigs, season to taste, then stir in parsley before serving.
