  • 2 pounds beef brisket or chuck roast
  • 8 ounces mushrooms
  • 4 medium carrots
  • 1 large onion
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 2 tablespoons fresh thyme leaves
  • 3 garlic cloves
  • 2 cups beef broth

Instructions

  1. For the crust, mix flour and butter until crumbly. Add sour cream and combine. Chill.
  2. In a skillet, heat oil over medium-high heat; brown the beef in batches.
  3. Sauté onions until translucent; add mushrooms and carrots, followed by garlic.
  4. Stir in flour, then add tomato paste, thyme, salt, pepper, and broths; simmer.
  5. Transfer filling to a pie dish and cover with rolled-out dough; cut slits for steam.
  6. Bake at 375°F for 30–35 minutes until golden brown.
