- 175 g baking spread (or unsalted butter)
- 175 g caster sugar
- 3 large eggs
- 2 tsp vanilla extract
- 175 g self-raising flour
- 25 g black food coloring
- 200 g unsalted butter (for frosting)
- 400 g icing sugar
- Green food coloring
- Yellow food coloring
- 150 g tinned custard
Instructions
- Preheat your oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with cases.
- In a mixing bowl, blend softened baking spread and caster sugar until fluffy. Add eggs one at a time along with vanilla extract, whisking well after each addition. Carefully fold in the self-raising flour and then mix in the black food coloring.
- Divide the mixture among cupcake cases and bake for 25-30 minutes until a skewer comes out clean. Let cool completely.
- Core the cooled cupcakes and fill each with colored tinned custard.
- For the buttercream, mix softened butter and icing sugar until smooth, then add vanilla and food coloring until desired color is reached.
- Decorate cupcakes using a piping bag or spoon, finishing with candy eyes.
