Ingredients

  • 175 g baking spread (or unsalted butter)
  • 175 g caster sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 175 g self-raising flour
  • 25 g black food coloring
  • 200 g unsalted butter (for frosting)
  • 400 g icing sugar
  • Green food coloring
  • Yellow food coloring
  • 150 g tinned custard

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with cases.
  2. In a mixing bowl, blend softened baking spread and caster sugar until fluffy. Add eggs one at a time along with vanilla extract, whisking well after each addition. Carefully fold in the self-raising flour and then mix in the black food coloring.
  3. Divide the mixture among cupcake cases and bake for 25-30 minutes until a skewer comes out clean. Let cool completely.
  4. Core the cooled cupcakes and fill each with colored tinned custard.
  5. For the buttercream, mix softened butter and icing sugar until smooth, then add vanilla and food coloring until desired color is reached.
  6. Decorate cupcakes using a piping bag or spoon, finishing with candy eyes.
