  • 1 cup granulated sugar

  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda

  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups finely grated carrots
  • 1 cup crushed pineapple, drained
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan or line with parchment paper.
  3. In a large mixing bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla until well combined.
  4. In another bowl, mix flour, baking soda, baking powder, salt, and cinnamon until fully combined.
  5. Gradually add dry ingredients into the wet mixture and stir gently until just combined.
  6. Fold in the grated carrots and drained crushed pineapple. If using walnuts, add them now.
  7. Pour batter into the prepared pan and bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cake to cool for about 10 minutes before transferring to a wire rack to cool completely.
