Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking pan or line with parchment paper.
- In a large mixing bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla until well combined.
- In another bowl, mix flour, baking soda, baking powder, salt, and cinnamon until fully combined.
- Gradually add dry ingredients into the wet mixture and stir gently until just combined.
- Fold in the grated carrots and drained crushed pineapple. If using walnuts, add them now.
- Pour batter into the prepared pan and bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Allow cake to cool for about 10 minutes before transferring to a wire rack to cool completely.
