  • 1 tsp ground ginger
  • ¼ tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • ⅛ tsp ground cloves
  • 1 ½ tbsp unsalted butter (or coconut oil), melted and cooled
  • 1 large egg white (room temperature)
  • 1 tsp vanilla extract
  • ¼ cup molasses
  • 5 tbsp nonfat milk (room temperature)

Instructions

  1. In a medium bowl, whisk together oats, flour, baking powder, spices, and salt.
  2. In another bowl, mix melted butter or coconut oil with egg white and vanilla until blended. Stir in molasses and milk.
  3. Gradually combine the wet mixture with the dry ingredients until just incorporated. Chill the dough for 30 minutes.
  4. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  5. Drop rounded scoops of dough onto the prepared sheet and flatten gently.
  6. Bake for 7–10 minutes until golden. Cool on the pan for 10 minutes before transferring to a wire rack.
