- 9 lasagna noodles
- 2 cups roasted butternut squash, pureed
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded

- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste

Instructions
- Preheat your oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions; drain and set aside.
- In a mixing bowl, combine pureed butternut squash, ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper; mix until well combined.
- Spread a thin layer of the butternut squash mixture in a baking dish.
- Layer three noodles over the mixture; add half of the spinach and half of the remaining butternut squash mixture; sprinkle one-third of mozzarella cheese.
