- 4 cups diced butternut squash
- 2 tbsp canola oil
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/2 tbsp maple syrup
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup couscous
- 1 cup boiling water
- 1 1/2 tsp canola oil
- 1 1/2 cups red onion, minced
- 1 lb ground turkey
- 1 tsp lemon pepper seasoning
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 cups swiss chard, finely chopped
- Juice from 1 lemon
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss diced butternut squash with canola oil, nutmeg, cinnamon, maple syrup, salt, and pepper until coated.
- Spread the squash on a baking sheet and roast for 25–30 minutes until tender and golden, stirring halfway.
- Prepare couscous by combining it with boiling water; cover and set aside for 5 minutes.
- In a skillet over medium heat, sauté minced red onion in canola oil until translucent. Add ground turkey and seasonings; cook until browned.
- Fluff couscous and mix it into the skillet with ground turkey. Stir in chopped swiss chard until wilted and add lemon juice.
- Serve warm alongside or mixed with the roasted squash.
