Ingredients

Scale
  • 1 cup mashed very ripe bananas (about 2 large)
  • 1 cup grated zucchini (squeezed dry)
  • 1 large egg
  • 1/4 cup olive oil (or avocado oil)
  • 1/2 cup maple syrup (or honey)
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour or spelt flour

Instructions

  1. Preheat your oven to 350 degrees F and line a 9" x 5" loaf pan with parchment paper.
  2. In a large bowl, mash the ripe bananas with a fork. Add grated zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt. Whisk until well combined.
  3. Gently fold in the flour using a spatula until just mixed; avoid overmixing to keep the bread light.
  4. Pour the batter into the prepared loaf pan and level it off.
  5. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow cooling in the pan for about 10 minutes, then transfer to a cooling rack before slicing.
