- 2 cups all-purpose flour

- 1/4 cup unsalted butter, melted

- 1 cup heavy cream
- 1/4 cup granulated sugar (for filling)
- 2 large egg yolks
- 1 tablespoon cornstarch
- 1/4 cup granulated sugar (for topping)
Instructions
- In a bowl, mix flour, sugar, baking powder, salt, and nutmeg. In another bowl, whisk milk, melted butter, eggs, and vanilla. Combine wet and dry ingredients until just mixed.
- Heat oil in a deep fryer or heavy pot to 350°F (175°C). Scoop small balls of dough into the hot oil and fry until golden brown (about 3-4 minutes). Drain on paper towels.
- For the filling, heat cream and sugar until simmering. Whisk egg yolks with cornstarch in a separate bowl. Gradually combine the hot cream mixture with the egg yolks while whisking continuously. Return to pan and cook until thickened.
- Cool donut holes slightly before using a piping bag to fill them with the crème brûlée mixture.
