  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder

  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup granulated sugar (for filling)
  • 2 large egg yolks
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. In a bowl, mix flour, sugar, baking powder, salt, and nutmeg. In another bowl, whisk milk, melted butter, eggs, and vanilla. Combine wet and dry ingredients until just mixed.
  2. Heat oil in a deep fryer or heavy pot to 350°F (175°C). Scoop small balls of dough into the hot oil and fry until golden brown (about 3-4 minutes). Drain on paper towels.
  3. For the filling, heat cream and sugar until simmering. Whisk egg yolks with cornstarch in a separate bowl. Gradually combine the hot cream mixture with the egg yolks while whisking continuously. Return to pan and cook until thickened.
  4. Cool donut holes slightly before using a piping bag to fill them with the crème brûlée mixture.
  5. Sprinkle sugar on top of each filled donut hole and caramelize with a kitchen torch until golden brown.
