  • 3 cups fresh peaches, peeled and diced
  • ¼ cup granulated sugar (for filling)

  • 1 tablespoon cornstarch
  • 2 large eggs
  • ¾ cup granulated sugar (for topping)
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup all-purpose flour (for topping)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by lining it with parchment paper or greasing it lightly.
  2. For the crust: Cream together the softened butter and sugar until light and fluffy. Mix in flour and salt until it resembles coarse crumbs. Press into the bottom of the prepared pan and bake for about 15 minutes until lightly golden. Set aside.
  3. For the filling: Toss diced peaches with granulated sugar, lemon juice, and cornstarch in a bowl until well coated.
  4. Assemble: Spread the peach mixture over the baked crust. In another bowl, whisk together eggs, sugar, sour cream (or Greek yogurt), flour, and vanilla until smooth. Pour over the peach layer.
  5. Bake again for an additional 35–40 minutes until the top is set and lightly golden.
  6. Allow cooling completely before cutting into squares.
