  • 4 pounds apples (about 9 medium-sized), peeled and cored
  • 1 cup apple cider
  • 3/4 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon kosher salt
  • Juice of half a lemon (about 1 tablespoon)

Instructions

  1. In a large pot, combine the apples, apple cider, brown sugar, cinnamon, cloves, and salt. Cook over medium-low heat uncovered for about 1 hour until apples are very soft.
  2. Use a hand blender to puree the mixture until smooth. If unavailable, transfer it to a regular blender in batches.
  3. Return the puree to the pot and continue to cook uncovered for another hour until thickened and deep mahogany in color.
  4. Stir in lemon juice, then transfer your homemade apple butter into jars and refrigerate.
