  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Prepare the wet ingredients by whisking together the heavy cream, one egg, and egg yolk. Chill in the freezer.
  2. In a food processor, combine flour, sugar, baking powder, chai spices, and salt. Pulse to mix.
  3. Add cold butter and pulse until combined with varying sizes.
  4. Gradually add the cream mixture until a dough forms.
  5. Shape into a disc, wrap in plastic wrap, and freeze for about 30 minutes.
  6. Roll out the dough and cut into wedges or desired shapes.
  7. Preheat oven to 375°F (190°C). Arrange on a baking sheet lined with parchment paper and brush with reserved egg wash.
  8. Bake for about 20–22 minutes until golden brown.
  9. Prepare the glaze by mixing powdered sugar, additional chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
  10. Once cooled slightly, dip each scone into the glaze and allow it to set before serving.
