- 40 grams Sichuan chili flakes
- 1 tsp salt
- 2 tsp brown sugar
- 1–2 tbsp black rice vinegar
- 2 tsp sesame oil
- 200 ml rapeseed oil
- 3 cloves garlic
- 2 pieces star anise
- 3 tsp Sichuan peppercorns
- 2 pieces black cardamom
- 2 pieces bay leaves
- 1 piece cinnamon stick
- 2 nuggets fresh ginger
Instructions
- Gather all spices in a heatproof bowl.
- Heat rapeseed oil in a saucepan over medium heat until hot but not smoking (about 180°C).
- Add crushed garlic and allow it to sizzle until golden brown. Then add star anise, Sichuan peppercorns, black cardamom, bay leaves, and cinnamon stick.
- After about 10 minutes, remove from heat and pour the hot oil over the spice mixture.
- Mix in salt, brown sugar, sweet paprika powder, toasted sesame seeds, and black rice vinegar until fully combined.
- Allow the mixture to cool before transferring to a clean storage jar.
