Ingredients

  • 40 grams Sichuan chili flakes
  • 1 tsp salt
  • 2 tsp brown sugar
  • 12 tbsp black rice vinegar
  • 2 tsp sesame oil
  • 200 ml rapeseed oil
  • 3 cloves garlic
  • 2 pieces star anise
  • 3 tsp Sichuan peppercorns
  • 2 pieces black cardamom
  • 2 pieces bay leaves
  • 1 piece cinnamon stick
  • 2 nuggets fresh ginger

Instructions

  1. Gather all spices in a heatproof bowl.
  2. Heat rapeseed oil in a saucepan over medium heat until hot but not smoking (about 180°C).
  3. Add crushed garlic and allow it to sizzle until golden brown. Then add star anise, Sichuan peppercorns, black cardamom, bay leaves, and cinnamon stick.
  4. After about 10 minutes, remove from heat and pour the hot oil over the spice mixture.
  5. Mix in salt, brown sugar, sweet paprika powder, toasted sesame seeds, and black rice vinegar until fully combined.
  6. Allow the mixture to cool before transferring to a clean storage jar.
