- 1 jar raspberry preserves (or other jams)
- 2 cups confectioners’ sugar
- 2–4 tbsp whole milk (as needed)
Instructions
- In a mixing bowl, combine warm water and sugar; stir until dissolved. Add yeast and let sit for 5-10 minutes until bubbly.
- In another bowl, mix bread flour, all-purpose flour, and salt. Gradually add the yeast mixture while stirring. Incorporate 4 tablespoons of olive oil.
- Knead dough on a floured surface for about 8-10 minutes until smooth.
- Place dough in a greased bowl; cover with a damp cloth and let rise in a warm area for 60-90 minutes until doubled.
- Preheat oven to 375°F (190°C). Punch down risen dough and spread on a greased baking sheet lined with parchment paper.
- Create wells in the dough and fill each with raspberry preserves.
- Drizzle remaining olive oil over the focaccia, cover again, and allow it to rise for another 30 minutes.
