Ingredients

  • 1012 organic lemons (zest only)
  • 750 ml high-proof lemon juice or grain alcohol alternative
  • 4 cups water
  • 3 cups sugar

Instructions

  1. Wash and dry the lemons thoroughly. Peel the yellow zest carefully, avoiding the bitter white pith.
  2. Place the lemon peels in a large glass jar and pour in the high-proof lemon juice until fully submerged. Seal tightly and store in a cool, dark place for 7–30 days, shaking gently every few days.
  3. In a saucepan, combine 4 cups of water with 3 cups of sugar over medium heat until dissolved completely. Allow to cool.
  4. Strain the infused liquid into another container to remove peels.
  5. Mix the cooled simple syrup with the strained infusion until well combined.
  6. Bottle in clean glass containers and seal tightly. Rest for at least one week before serving.
  7. Chill in the freezer and serve ice cold.
