- 10–12 organic lemons (zest only)
- 750 ml high-proof lemon juice or grain alcohol alternative
- 4 cups water
- 3 cups sugar
Instructions
- Wash and dry the lemons thoroughly. Peel the yellow zest carefully, avoiding the bitter white pith.
- Place the lemon peels in a large glass jar and pour in the high-proof lemon juice until fully submerged. Seal tightly and store in a cool, dark place for 7–30 days, shaking gently every few days.
- In a saucepan, combine 4 cups of water with 3 cups of sugar over medium heat until dissolved completely. Allow to cool.
- Strain the infused liquid into another container to remove peels.
- Mix the cooled simple syrup with the strained infusion until well combined.
- Bottle in clean glass containers and seal tightly. Rest for at least one week before serving.
- Chill in the freezer and serve ice cold.
