  • 2 large eggs
  • 3/4 cup light brown sugar (packed)
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon red gel food coloring
  • 1/4 cup Oreo cookie crumbs
  • 3/4 cup semisweet chocolate chips

Instructions

  1. Melt butter in a saucepan or microwave and let it cool.
  2. Blend three Oreo cookies into fine crumbs; crush three more into bite-sized pieces.
  3. In a bowl, sift together flour, cocoa powder, baking soda, cornstarch, and salt.
  4. In a stand mixer, beat cooled butter with both sugars until creamy. Add eggs one at a time, followed by vanilla and red gel food coloring.
  5. Gradually add dry ingredients until just combined; fold in chocolate chips and Oreo pieces.
  6. Refrigerate dough for at least three hours.
  7. Preheat oven to 350°F (175°C). Shape dough into balls and place on parchment-lined baking sheets.
  8. Bake for 12–14 minutes; cool before serving.
