Ingredients
- 1 cup unsalted butter (room temperature)
- 1/2 cup sugar
- 2 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 3 cups shredded sweetened coconut
- 15 ounces soft caramels
- 3 tablespoons whole milk
- 8 ounces dark chocolate
Instructions
- Preheat the oven to 350°F (175°C). In a mixing bowl, cream together butter and sugar until light and fluffy. Add flour, baking powder, salt, milk, and vanilla; mix until just combined.
- Roll out dough to about 1/4 inch thick on a floured surface. Cut into shapes with a cookie cutter and place on a parchment-lined baking sheet. Bake for 12–15 minutes until lightly golden. Cool completely.
- For the topping, melt caramels with whole milk and salt in a saucepan over medium heat. Stir in shredded coconut until well coated.
- Spread the coconut mixture over each cooled cookie. Melt dark chocolate using a microwave or double boiler. Dip the bottom of each cookie in melted chocolate and place back on parchment to set.
