  • 1 cup unsalted butter (room temperature)
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 3 cups shredded sweetened coconut
  • 15 ounces soft caramels
  • 3 tablespoons whole milk
  • 8 ounces dark chocolate

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together butter and sugar until light and fluffy. Add flour, baking powder, salt, milk, and vanilla; mix until just combined.
  2. Roll out dough to about 1/4 inch thick on a floured surface. Cut into shapes with a cookie cutter and place on a parchment-lined baking sheet. Bake for 12–15 minutes until lightly golden. Cool completely.
  3. For the topping, melt caramels with whole milk and salt in a saucepan over medium heat. Stir in shredded coconut until well coated.
  4. Spread the coconut mixture over each cooled cookie. Melt dark chocolate using a microwave or double boiler. Dip the bottom of each cookie in melted chocolate and place back on parchment to set.
