Ingredients

  • 1 lb boneless, skinless chicken thighs
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season chicken thighs with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Heat a skillet over medium heat and sear the seasoned chicken for 3–4 minutes on each side until golden brown. Remove from skillet.
  3. In a small bowl, mix BBQ sauce and honey until well combined.
  4. In the same skillet, toast uncooked rice for about 1–2 minutes while stirring frequently.
  5. Add chicken broth and half of the BBQ sauce mixture to the skillet. Stir to combine and return the seared chicken.
  6. Pour the remaining BBQ sauce mixture over the top and cover the skillet. Reduce heat and let simmer for about 15 minutes until rice is tender.
  7. If using mixed vegetables, add them after simmering and cover again for an additional 5 minutes.
  8. Let sit for 5 minutes before serving and garnish with chopped green onions.
