- 1 lb boneless, skinless chicken thighs
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season chicken thighs with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Heat a skillet over medium heat and sear the seasoned chicken for 3–4 minutes on each side until golden brown. Remove from skillet.
- In a small bowl, mix BBQ sauce and honey until well combined.
- In the same skillet, toast uncooked rice for about 1–2 minutes while stirring frequently.
- Add chicken broth and half of the BBQ sauce mixture to the skillet. Stir to combine and return the seared chicken.
- Pour the remaining BBQ sauce mixture over the top and cover the skillet. Reduce heat and let simmer for about 15 minutes until rice is tender.
- If using mixed vegetables, add them after simmering and cover again for an additional 5 minutes.
- Let sit for 5 minutes before serving and garnish with chopped green onions.
