Ingredients

  • 2 tsp sea salt, divided
  • 1 tsp fresh cracked pepper, divided
  • 1 tsp oregano, divided
  • 1 tsp garlic powder
  • 1/2 tsp paprika, divided
  • 8 oz turkey strips
  • 2 Tbsp extra virgin olive oil
  • 6 chicken thighs
  • 1 large shallot
  • 3 cloves garlic, grated or pressed
  • 1 cup chicken broth
  • 1 stick of butter
  • 1/2 cup honey
  • 4 sprigs fresh thyme
  • 2 large peaches, sliced
  • Fresh basil and additional fresh thyme for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Season chicken thighs with half the sea salt, pepper, oregano, and paprika.
  2. In a heavy sauté pan over medium heat, add turkey strips and cook until dark red. Remove from the pan.
  3. Wipe out excess oil from the pan and add olive oil. Sear chicken thighs on both sides for 1–2 minutes until browned.
  4. Sauté shallots in the same pan for 2 minutes, then add grated garlic and cook until fragrant.
  5. Pour in chicken broth to deglaze the pan, scraping up any brown bits for added flavor.
  6. Stir in butter and honey until melted, then return chicken to the pan with thyme sprigs.
  7. Spoon sauce over chicken and cover. Bake for 15 minutes.
  8. Add sliced peaches on top, spoon more sauce over them, and broil for an additional 3–5 minutes until peaches are soft.
  9. Garnish with fresh basil and thyme before serving.
