  • 1 small avocado, sliced

  • Juice of 1/2 lime
  • 2 tablespoons olive oil (for lime dressing)
  • 1 tablespoon lime juice (for lime dressing)
  • 1/2 teaspoon honey (for lime dressing)
  • 1/2 teaspoon garlic powder (for lime dressing)
  • 1/4 teaspoon salt (for lime dressing)
  • 1/4 teaspoon black pepper (for lime dressing)

Instructions

  1. In a small bowl, whisk together honey, chopped chipotle peppers, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper; cook for 6–8 minutes per side until golden brown and cooked through (165°F internal temperature).
  3. Drizzle the honey chipotle sauce over the chicken and let rest before slicing.
  4. For each bowl, layer cooked rice with black beans, cherry tomatoes, corn, red onion slices, avocado slices, and chopped cilantro.
  5. Optionally mix olive oil, lime juice, honey, garlic powder, salt, and black pepper to make the lime dressing.
  6. Top the assembled bowls with sliced chicken and drizzle with lime dressing if desired.
