- 1 lb boneless skinless chicken (breast or thighs), chopped
- 1 tbsp olive oil
- 2 tbsp honey
- Juice of 1 lime
- 1 clove garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 1 ripe avocado, diced
- Leaves from 1 head romaine or butter lettuce
- 1 cup canned black beans, rinsed
- 1 cup corn (canned or thawed if frozen)
- 1 cup diced red onion
- For the sauce: 1 cup Greek yogurt, 1 tbsp lime juice, 1 tsp chipotle or smoked paprika, Salt, to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add chopped chicken and stir in honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper. Cook for 8-10 minutes until the chicken is browned and cooked through.
- In a small bowl, mix Greek yogurt, lime juice, chipotle powder, and salt until smooth. Chill until ready to use.
- Arrange lettuce leaves on a platter and fill each with the cooked chicken mixture. Top with diced avocado, black beans, corn, red onion.
- Drizzle with the chipotle-lime sauce before serving.
