  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the rigatoni according to package instructions in salted boiling water. Drain and reserve 1/2 cup of pasta water.
  2. In a skillet, heat 2 tablespoons olive oil over medium-high heat. Season and cook the chicken for about 5-7 minutes until golden and cooked through. Set aside.
  3. In the same skillet, add the remaining olive oil and sliced carrots. Sauté for 3-4 minutes until softened, then add minced garlic and cook for another minute.
  4. Lower the heat, add butter, then stir in honey, soy sauce, and black pepper. Simmer for about 2-3 minutes until slightly thickened.
  5. Return the chicken to the skillet and toss everything together with the cooked pasta. If needed, add reserved pasta water to loosen the sauce.
  6. Garnish with chopped green onions before serving warm.
