  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. Boil rigatoni: Cook according to package instructions in salted water. Drain and reserve 1/2 cup of pasta water.
  2. Cook chicken: Season cubed chicken with salt and pepper. Sauté in a skillet with olive oil over medium-high heat for about 5–7 minutes until golden brown. Set aside.
  3. Sauté vegetables: In the same skillet, add sliced carrots and cook for 3–4 minutes. Add minced garlic and sauté for an additional minute.
  4. Prepare sauce: Lower heat, add butter to the skillet, then stir in honey, soy sauce, and black pepper; simmer for 2–3 minutes until slightly thickened.
  5. Combine: Return chicken to the skillet; add drained pasta and toss well to coat with sauce. If too thick, adjust with reserved pasta water.
  6. Serve: Garnish with chopped green onions before serving warm.
