  • 4 boneless skinless salmon fillets (about 7oz/200g each)
  • 1/3 cup honey
  • 6 tbsp unsalted butter
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1.5 tbsp soy sauce (not dark)
  • 12 cloves garlic, finely diced
  • 1/21 tsp chili flakes
  • Salt & pepper to taste
  • Olive oil for cooking

Instructions

  1. Begin by patting the salmon fillets dry and seasoning them with salt and pepper.
  2. Heat oil in a large non-stick pan over medium-high heat, then add the salmon skin-side down. Cook for about 3 minutes until golden brown, flip, and cook for an additional minute.
  3. Move the salmon to one side of the pan, add butter to the other side, and baste the fish with melted butter for about 1-2 minutes until slightly golden.
  4. Lower the heat and add garlic and chili flakes; sauté briefly before mixing in honey, vinegar, and soy sauce. Stir gently until thickened like caramel (around five minutes).
  5. Return the salmon to the pan, basting it generously with the sauce before serving warm.
