  • 1 teaspoon brown sugar

  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 to 1/2 teaspoon chipotle chili powder (optional)
  • 1/4 teaspoon pepper
  • 2 medium avocados (chopped)
  • 1 cup cherry tomatoes (quartered)
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper (chopped)
  • 1 jalapeno pepper (diced, seeds separated)
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove (minced)
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Marinate the chicken: In a mixing bowl, whisk together olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if desired), and pepper. Add the chicken breasts and marinate for at least 30 minutes.
  2. Cook the chicken: Heat a skillet over medium-high heat. Add the marinated chicken and cook for about 5 minutes on each side until cooked through.
  3. Prepare avocado salsa: In another bowl, combine chopped avocados, cherry tomatoes (or Roma), corn kernels, red onion, red bell pepper, jalapeno pepper, cilantro, minced garlic (or garlic powder), lime juice, ground cumin, salt and pepper. Mix gently.
  4. Serve: Let the chicken rest for a couple of minutes before slicing. Top with avocado salsa and enjoy with your favorite sides.
