  • Fresh corn from 1 ear
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced (seeds removed)
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced (or 1/4 teaspoon garlic powder)
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper (or more to taste)

Instructions

  1. Marinate the chicken by mixing olive oil, lime juice, zest, and spices in a bowl. Coat the chicken and let it marinate for at least 30 minutes.
  2. Prepare the avocado salsa by combining chopped avocados, tomatoes, corn, onion, jalapeno, cilantro, garlic, lime juice, salt, and pepper in another bowl.
