Ingredients
- 1 cup unsalted butter, softened to room temperature
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg (optional)
- 1/2 teaspoon salt
- 3 cups old-fashioned rolled oats
- 2 cups powdered sugar, sifted
- 3–4 tablespoons milk or cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter, light brown sugar, and granulated sugar until fluffy. Add eggs one at a time and then stir in vanilla extract.
- In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually mix this into the wet ingredients until just combined.
- Fold in old-fashioned rolled oats until evenly distributed.
- Pour the mixture into the prepared baking pan and spread evenly. Bake for 25-30 minutes until golden brown.
- While cooling, prepare the icing by mixing sifted powdered sugar with milk or cream and vanilla until smooth.
- Once cooled, drizzle or spread icing over the bars and allow it to set before cutting into squares.
