  • 1 pound pinto beans, rinsed and sorted
  • 6 cups vegetable broth
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse pinto beans thoroughly under cold water and sort through them to remove any debris.
  2. Select the sauté function on your Instant Pot. Add a splash of vegetable broth to prevent sticking.
  3. Sauté diced onion and minced garlic for about 3-4 minutes until soft.
  4. Add rinsed pinto beans, remaining vegetable broth, ground cumin, chili powder, and salt. Stir well.
  5. Close the lid securely and set the valve to sealing position. Cook on high pressure for 35 minutes.
  6. Allow for natural pressure release for 10 minutes before switching to quick release for any remaining pressure.
  7. Carefully open the lid and stir gently before serving. Garnish with fresh cilantro.
