  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and granulated sugar; press into the bottom of a springform pan.
  2. In a bowl, beat softened cream cheese until smooth. Gradually add sugar and vanilla extract. Mix in eggs one at a time, then fold in sour cream.
  3. Pour cheesecake batter over the crust and set aside. In another bowl, combine diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice; pour over the cheesecake layer.
  4. For the crumble topping, mix flour, brown sugar, cinnamon, and cold cubed butter until crumbly; sprinkle on top of the apple layer.
  5. Bake for about 65 minutes until edges are set but center jiggles slightly. Cool completely before refrigerating for at least four hours.
