Ingredients

Scale
  • 3 ½ cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast
  • ¾ cup warm milk
  • 3 tablespoons sugar
  • 1 large egg
  • ¼ cup unsalted butter
  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 1 teaspoon vanilla extract
  • Vegetable oil (for deep frying)
  • Powdered sugar, for dusting

Instructions

  1. Make the Dough: Dissolve yeast and sugar in warm milk; let sit until foamy. Combine flour and salt in a large bowl. Mix in yeast mixture, egg, and melted butter. Knead until smooth (about 8-10 minutes). Let rise in a greased bowl until doubled (1-1½ hours).
  2. Prepare Cream Filling: Heat milk; whisk together sugar, yolks, and cornstarch. Gradually add hot milk to egg mixture; return to heat until thickened. Stir in butter and vanilla; cool before chilling.
  3. Shape & Fry: Divide dough into pieces; roll into balls and let rise again (30 minutes). Fry at 350°F until golden brown (2-3 minutes per side). Drain on paper towels.
  4. Fill & Serve: Once cooled, fill with chilled pastry cream using a piping bag. Dust with powdered sugar.
