- 1.5 lbs Ground Beef
- 0.5 lb Ground Beef
- 1 cup Fresh Breadcrumbs
- 1/2 cup Grated Parmesan Cheese
- 1/4 cup Finely Chopped Fresh Parsley
- 2 cloves Garlic, minced
- 1 large Egg, lightly beaten
- 1/4 cup Milk
- 1 teaspoon Dried Oregano
- 1/2 teaspoon Dried Basil
- 1/4 teaspoon Red Pepper Flakes (optional)
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 2 tablespoons Olive Oil (for browning)
- 1 cup Packed Fresh Parsley Leaves
- 1/2 cup Packed Fresh Cilantro Leaves
- 1/4 cup Fresh Oregano Leaves
- 2 cloves Garlic, minced
- 1/4 cup Red Apple Vinegar
- 1/2 cup Olive Oil (extra virgin)
- 1/4 cup Finely Chopped Red Onion
- 1–2 Red Chilies, seeded and finely chopped (adjust to taste)
- 1 teaspoon Dried Oregano
- 1/2 teaspoon Red Pepper Flakes (optional)
- 1/2 teaspoon Salt (or to taste)
- 1/4 teaspoon Black Pepper (or to taste)
Instructions
- In a large bowl, gently combine ground beef, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, milk, oregano, basil, optional red pepper flakes, salt, and black pepper. Do not overmix.
- Wet your hands with cold water and roll the mixture into balls, approximately 1.5–2 tablespoons each.
- Heat olive oil in a large skillet over medium-high heat and brown the meatballs on all sides for about 8–10 minutes.
- Choose either to simmer the meatballs in your favorite tomato sauce until cooked through or bake them in the oven at 375°F for 20-25 minutes.
- Prepare the chimichurri by blending parsley, cilantro, oregano, garlic, red apple vinegar, olive oil, red onion, and red chilies in a food processor until finely chopped.
- Allow the chimichurri to rest for at least 15 minutes before serving over the meatballs.
