  • 1 large apple (julienned)
  • 2 medium carrots (shredded)
  • 3/4 cup unsalted slivered almonds (toasted)
  • 3/4 cup shredded sharp white cheddar cheese
  • 1/3 cup sliced red onion
  • 1/2 cup olive oil
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp real maple syrup
  • 1 1/2 tsp dijon mustard
  • Salt (and freshly ground black pepper, to taste)

Instructions

  1. Prepare the dressing by whisking together olive oil, lemon juice, apple cider vinegar, maple syrup, dijon mustard, salt, and pepper in a mixing bowl. Chill in the fridge.
  2. Remove the kale leaves from the thick ribs and rinse thoroughly under cold water. Use a salad spinner to dry well. Thinly slice the kale into ribbons.
  3. In a large bowl, combine the kale with julienned apples, shredded carrots, toasted almonds, shredded cheddar cheese, and thinly sliced red onion.
  4. Pour the chilled dressing over the salad mixture and toss well to ensure everything is evenly coated.
  5. Serve immediately for the best flavor and texture.
