  • 2 pounds large shrimp (peeled, deveined)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 4 tablespoons butter
  • 1/2 cup finely chopped onion
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh basil (chopped or 1 tablespoon dried)
  • 1/8 teaspoon ground nutmeg
  • 1 cup heavy whipping cream
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded monterey jack cheese
  • 1/2 cup crushed beef rind crumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. Heat olive oil in a skillet over medium-high heat. Season shrimp with salt and pepper and sear for 1–2 minutes per side until just pink; set aside.
  3. In the same skillet, melt butter and sauté onion until soft. Add garlic and basil, cooking until fragrant.
  4. Pour in heavy cream and simmer for 3–4 minutes before stirring in cheeses until smooth.
  5. Place shrimp in the baking dish and pour the cream sauce over them.
  6. Mix crushed beef rinds with remaining parmesan cheese and sprinkle over the top.
  7. Bake for 25 minutes until golden brown.
