Ingredients
- 1 cup almond flour
- 5 tablespoons unsalted butter (melted completely)
- 2 tablespoons confectioners sweetener
- 8 ounces cream cheese (softened)
- 1 egg yolk
- 1/3 cup confectioners sweetener
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 3 large eggs
- 1/3 cup lemon juice
- 2 tablespoons lemon zest
- 1/2 cup confectioners sweetener
- 1/3 cup coconut flour
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with aluminum foil.
- For the crust, mix almond flour, melted butter, and confectioners sweetener until combined. Press into the bottom of the prepared pan and pre-bake for 7 minutes. Let cool.
