  • 1 cup almond flour
  • 5 tablespoons unsalted butter (melted completely)
  • 2 tablespoons confectioners sweetener
  • 8 ounces cream cheese (softened)
  • 1 egg yolk
  • 1/3 cup confectioners sweetener
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 3 large eggs
  • 1/3 cup lemon juice
  • 2 tablespoons lemon zest
  • 1/2 cup confectioners sweetener
  • 1/3 cup coconut flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with aluminum foil.
  2. For the crust, mix almond flour, melted butter, and confectioners sweetener until combined. Press into the bottom of the prepared pan and pre-bake for 7 minutes. Let cool.
  3. In a blender, combine cream cheese, egg yolk, confectioners sweetener, vanilla extract, lemon juice, and zest until smooth. Spread over the cooled crust.
  4. In another bowl, whisk together eggs, lemon juice, zest, confectioners sweetener, and coconut flour until smooth. Chill for 10 minutes before pouring over the cheesecake layer.
  5. Bake for 20-25 minutes until set. Allow cooling completely before slicing into bars.
