  • 4 cups shredded zucchini
  • 1/2 cup diced yellow onion
  • 2 tbsp minced garlic
  • 2 eggs (beaten)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 3/4 cup grated Parmesan cheese (divided)
  • 1/2 cup crushed beef rinds or Parmesan cheese crisps
  • 3 tbsp butter

Instructions

  1. Preheat your oven to 375°F (190°C) and spray an 8” x 8” baking dish with non-stick cooking spray.
  2. Drain the shredded zucchini by placing it in a kitchen towel and squeezing out excess moisture.
  3. In a mixing bowl, combine drained zucchini, diced onion, minced garlic, beaten eggs, mozzarella cheese, cheddar cheese, and half of the Parmesan cheese. Mix well until combined.
  4. Transfer the mixture into the prepared baking dish and bake for about 20 minutes until set.
  5. While baking, melt the butter and combine it with crushed beef rinds (or Parmesan crisps) and remaining Parmesan cheese.
  6. Remove the casserole from the oven after 20 minutes and top with the buttered mixture. Return to bake for another 5-8 minutes until golden brown and crispy.
  7. Let cool slightly before serving.
