Ingredients
- 4 cups shredded zucchini
- 1/2 cup diced yellow onion
- 2 tbsp minced garlic
- 2 eggs (beaten)
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 3/4 cup grated Parmesan cheese (divided)
- 1/2 cup crushed beef rinds or Parmesan cheese crisps
- 3 tbsp butter
Instructions
- Preheat your oven to 375°F (190°C) and spray an 8” x 8” baking dish with non-stick cooking spray.
- Drain the shredded zucchini by placing it in a kitchen towel and squeezing out excess moisture.
- In a mixing bowl, combine drained zucchini, diced onion, minced garlic, beaten eggs, mozzarella cheese, cheddar cheese, and half of the Parmesan cheese. Mix well until combined.
- Transfer the mixture into the prepared baking dish and bake for about 20 minutes until set.
- While baking, melt the butter and combine it with crushed beef rinds (or Parmesan crisps) and remaining Parmesan cheese.
- Remove the casserole from the oven after 20 minutes and top with the buttered mixture. Return to bake for another 5-8 minutes until golden brown and crispy.
- Let cool slightly before serving.
