  • 2 lbs ground beef
  • 1 1/2 cups panko bread crumbs
  • 1 large onion (finely diced)
  • 8 cloves garlic (crushed)
  • 5 green onions (minced)
  • 2 tbsp gochujang
  • 3 tbsp apricot jam
  • 2 tbsp gochujang
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 2 tsp soy sauce
  • 1 tsp sesame oil

Instructions

  1. Preheat your oven to 350F.
  2. In a frying pan coated with vegetable oil, cook the diced onions until translucent (about 10 minutes). Add crushed garlic and cook for an additional 2 minutes. Remove from heat and cool in a bowl.
  3. Combine cooled onion mixture with minced green onions, gochujang, eggs, and kosher salt in a separate bowl.
  4. In a large bowl, mix ground beef and breadcrumbs. Fold in the onion-gochujang mixture gently until just combined.
  5. Transfer the mixture into a meatloaf pan or shape it freehand on a cookie sheet.
  6. Bake for about 40 minutes until the internal temperature reaches 140F.
  7. Meanwhile, prepare the glaze by mixing all glaze ingredients together in a bowl.
  8. Once the meatloaf hits 140F, remove it from the oven and spoon glaze over it.
  9. Return to oven and bake until it reaches an internal temperature of 160F (another 10-15 minutes).
  10. Let rest for about 10 minutes before slicing and serving.
