  • 2 quarts chicken stock or broth
  • 1 pound ground beef
  • 20 wonton wrappers, cut into quarters
  • 3 baby bok choy heads, roughly chopped
  • 1 bunch green onions, divided
  • 1 garlic clove, thinly sliced
  • 1 (3-inch) piece ginger, peeled, or 2 teaspoons ground ginger, divided
  • 2 Tablespoons soy sauce, plus more to taste
  • 1 1/2 teaspoons rice or white vinegar
  • 1 Tablespoon brown sugar
  • 1 teaspoon Kosher salt, divided
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons cornstarch
  • Optional: Sriracha Hot Sauce or Chili Crunch

Instructions

  1. In a large saucepan or Dutch oven, heat the chicken stock over medium-high heat. Add chopped green onion whites, sliced garlic, and ginger.
  2. Stir in soy sauce, vinegar, brown sugar, and salt; bring to a boil.
  3. In a bowl, mix ground beef with remaining green onions, ginger, soy sauce, sesame oil, and cornstarch until combined. Form into 1-inch balls.
  4. Add meatballs to boiling broth; reduce to simmer for 5 minutes. Then add wonton wrappers and bok choy; cook an additional 8 minutes.
  5. Serve hot with garnishes like green onions and hot sauce.
