- 2 quarts chicken stock or broth
- 1 pound ground beef
- 20 wonton wrappers, cut into quarters
- 3 baby bok choy heads, roughly chopped
- 1 bunch green onions, divided
- 1 garlic clove, thinly sliced
- 1 (3-inch) piece ginger, peeled, or 2 teaspoons ground ginger, divided
- 2 Tablespoons soy sauce, plus more to taste
- 1 1/2 teaspoons rice or white vinegar
- 1 Tablespoon brown sugar
- 1 teaspoon Kosher salt, divided
- 2 teaspoons toasted sesame oil
- 2 teaspoons cornstarch
- Optional: Sriracha Hot Sauce or Chili Crunch
Instructions
- In a large saucepan or Dutch oven, heat the chicken stock over medium-high heat. Add chopped green onion whites, sliced garlic, and ginger.
- Stir in soy sauce, vinegar, brown sugar, and salt; bring to a boil.
- In a bowl, mix ground beef with remaining green onions, ginger, soy sauce, sesame oil, and cornstarch until combined. Form into 1-inch balls.
- Add meatballs to boiling broth; reduce to simmer for 5 minutes. Then add wonton wrappers and bok choy; cook an additional 8 minutes.
- Serve hot with garnishes like green onions and hot sauce.
