  • 1 tbsp butter
  • 1 onion (or 2 shallots)

  • 6 cups turkey or chicken stock
  • 1/2 cup giant pearl couscous
  • 2 cups cooked turkey or chicken
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil and butter in a large pot over low heat.
  2. Add chopped onion, celery, carrot, garlic, and thyme; sauté for about 5 minutes until softened.
  3. Pour in the turkey or chicken stock along with cooked turkey. Add bay leaves and bring to a boil; season with salt and pepper.
  4. Stir in couscous; cook for about 10 minutes until tender.
  5. Remove bay leaves, sprinkle with parsley, ladle into bowls, and serve warm.
