  • 1/2 cup (113 grams) unsalted butter
  • 1/2 cup (100 grams) granulated sugar
  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
  • 4 large eggs
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine unsalted butter, granulated sugar, rolled oats, and flour until crumbly. Press into the bottom of a greased 9×9 inch baking dish.
  3. Bake the crust for about 15 minutes until lightly golden brown.
  4. While the crust is baking, whisk together eggs, honey, lemon zest, and freshly squeezed lemon juice in another bowl. Gradually add flour and mix until well combined.
  5. Pour the filling mixture over the slightly cooled crust and spread evenly.
  6. Bake again for 20-25 minutes or until set.
  7. Allow to cool completely before slicing into squares.
