- ¼ teaspoon dried thyme
- ¼ teaspoon salt
- 2 bay leaves
- 1 ½ pounds boneless, skinless chicken breasts
- 6 cups low sodium chicken broth
- 1 cup dry orzo pasta
- ½ cup fresh squeezed lemon juice
Instructions
- Heat olive oil in an Instant Pot or large pot over medium heat. Sauté diced carrots, onion, celery, and garlic until softened (about 5 minutes).
- Stir in black pepper, parsley, thyme, salt, and bay leaves. Add chicken breasts.
- Pour in chicken broth; bring to a gentle boil if using the stove or close the lid for the Instant Pot.
- Cook: Simmer on low for 30 minutes (stove) or set to high pressure for 15 minutes (Instant Pot).
- Shred cooked chicken and return it to the pot with dry orzo pasta.
- Simmer until pasta is al dente (about 10 minutes). Stir in fresh lemon juice before serving.
