  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in an Instant Pot or large pot over medium heat. Sauté diced carrots, onion, celery, and garlic until softened (about 5 minutes).
  2. Stir in black pepper, parsley, thyme, salt, and bay leaves. Add chicken breasts.
  3. Pour in chicken broth; bring to a gentle boil if using the stove or close the lid for the Instant Pot.
  4. Cook: Simmer on low for 30 minutes (stove) or set to high pressure for 15 minutes (Instant Pot).
  5. Shred cooked chicken and return it to the pot with dry orzo pasta.
  6. Simmer until pasta is al dente (about 10 minutes). Stir in fresh lemon juice before serving.
